Sweet Potato Casserole

     Sweet Potatoes have become a new favorite in our house. They taste great and are so much better for you than regular potatoes. Of course, this recipe is all about flavor and texture which this dish has an abundance of. Don't wait for a holiday, it's great any day of the year.

  • 7 large or 6 lbs of sweet potatoes, pealed and cubed
  • 1/4 cup butter or margarine
  • 1/2 cup orange marmalade
  • 1/4 cup orange juice
  • 1/4 cup brown sugar
  • 2 tsp. salt
  • 1 tsp. ginger ground
To top the casserole you'll also need

  • 1 dz. crumbled oatmeal cookies
  • 6 tbls. softened butter or maragine
     In pot, place sweet potatoes and cover with water. Bring to boil, then simmer for about 15 minutes or till tender and drain. Mash potatoes with butter and add the rest of the ingredients in casserole dish.
     For topping toss butter and cookie pieces and scatter over top. Heat in 400 degree oven for about 18 minutes, remove from oven and let settle for 10 minutes. Serves 10 - 12.

I love sweet potatoes. :) this looks great! I never thought of crumbled oatmeal cookies as a topping; we've never deviated from marshmallows haha. looks delish though! :)
