WHY BLANCHE?

If you are going to freeze vegetables one of the most important things you need to do is blanch them first.


Blanching is putting the vegetables in rolling boiling water for a couple minutes. The reason this is important mainly is because the boiling water will stop the enzyme action that destroys the fresh flavor. In addition the process will also shrink, brighten colors, and help keep the vegetables full of vitamins.
