Love Onions?

     If you don't know by now I love onions and yesterday with virtually no food in the house I made a dinner that was so super tasty I had to pat myself on the back. Here's what you need:

  • 2 onions
  • 2 cups egg noodles, cooked
  • 3 boneless, skinless chicken breasts
  • Garlic salt
  • Lemon pepper
  • Extra virgin olive oil
  • 1 tblsp. sugar
  • 3 tblsp. margerine, or butter
  1. Chop onions into large pieces. Place in small frying pan with drizzle of olive oil and the sugar on medium heat. Cook till onions are well carmelized, translusent and slightly browned. Stir frequently. Remove onions from pan and set aside.
  2. In same pan add another little squirt of olive oil, turn the heat to high and place chicken breasts in to brown and sear. Maybe 30 seconds per side.
  3. Remove chicken breasts and cut into bite size pieces.
  4. In saucepan melt the margerine and add the chicken and a large healthy dash of the garlic salt and the lemon pepper. You should have a nice little sauce going. Cook chicken till done.
  5. Add the onions and the egg noodles to chicken and mix well, or serve the chicken and the onions over the egg noodles.
