While the star of the Thanksgiving feast is usually the turkey, and you're planning the rest of the feast menu, highlight more fruit and vegetables on the table. One way to do this is to is to alter that fabulous dressing recipe a little by omiting some of the bread and adding in more produce. Also offer a green salad as a side dish.
If you really want to make it a healthier Thanksgiving feast, avoid adding excess butter, margarine, oil, and creams to the veggies. Steam them instead and use plenty of spices instead of just salt and pepper.
