- 2 pounds fresh spinach
- 1/4 cup lightly salted butter
- 1/4 cup all-purpose flour
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1/4 tsp. fresh ground pepper
- Cover and boil spinach for 10 to 15 minutes in water.
- Reserve 1 1/2 cups of the liquid and drain.
- Chop spinach and set aside.
- For sauce, melt butter and stir in the flour, continue to mix until smooth. Add the reserved liquid. Simmer it for about 5 min. until it's thick and creamy.
- Add spinach, nutmeg, salt, and pepper.

I always wondered why Nutmeg goes with Spinach.. any answers?
