CREAMY SPINACH


  • 2 pounds fresh spinach
  • 1/4 cup lightly salted butter
  • 1/4 cup all-purpose flour
  • 1/4 tsp. nutmeg
  • 1/2 tsp. salt
  • 1/4 tsp. fresh ground pepper


  1. Cover and boil spinach for 10 to 15 minutes in water.
  2. Reserve 1 1/2 cups of the liquid and drain.
  3. Chop spinach and set aside.
  4. For sauce, melt butter and stir in the flour, continue to mix until smooth. Add the reserved liquid. Simmer it for about 5 min. until it's thick and creamy.
  5. Add spinach, nutmeg, salt, and pepper.
Makes 4 to 6 servings

I always wondered why Nutmeg goes with Spinach.. any answers?
