CORN SALAD


  • 1 10 oz. pkg. thawed frozen corn
  • 1 cup green pepper, diced
  • 1 cup red pepper, diced
  • 1 cup celery, diced
  • 1/2 cup fresh minced parsley
  • 1/2 cup green onions, chopped
  • 1/4 cup shredded Parmesan cheese
  • 1 tsp. ground cumin
  • 3/4 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. hot pepper sauce
  • 1 1/2 tbs. olive oil
  • 1 clove mince garlic
  • 3 tbs. red wine vinegar

Combine first 11 ingredients. Set aside. Add garlic to olive oil in separate dish or saucepan and heat just till hot. Remove from heat and let cool. Stir in red wine vinegar and poor mixture over salad.
